Allspice is produced from the dried, nearly ripe fruit of Pimenta officinalis Lindl. Allspice is dark reddish-brown in color with a characteristic-mild, clove-like flavor and odor. It is used for cookies, cakes, pies, spiced tea mixes, pickling spice, Jamaican jerk seasoning and soups curries.
