Baking with coconut flour is a unique experience due to the high fiber content; recipes designed for coconut flour would be a good way to become familiar with this flour. You can replace up to 20% of the flour in a recipe with coconut flour but you will need to add an equal amount of liquid to compensate. Bob's Red Mill Coconut Flour is ground from dried, defatted coconut meat; is high in fiber, low in digestible carbohydrates and has a light coconut flavor that allows the flour to blend seamlessly into sweet or savory baked goods. It makes a wonderful coating for fish, chicken and other proteins. Coconut flour does not contain sulfites and is unsweetened. It is not considered raw. After opening, store in an airtight container in the fridge or freezer to keep it fresh.
